Bran Muffins...no really they are good.



I don't know what kid ever says that bran muffins are their favorite muffins but when I was a kid that would have been my response.  I'm not sure if it was all bran muffins or specifically the ones my mom made.  We would have bran muffins at more than just breakfast in fact more times at dinner than for breakfast.  Breakfast was always blueberry with crumb topping or chocolate chip.  But back to the bran muffins.  As I wait for my little girl to arrive I am getting very nostalgic and remembering the things I enjoyed as a kid.  
So here is my favorite bran muffin recipe.  I hope you and your kids enjoy it as much as I did.  These are actually better once cooled slightly than right out of the oven in my opinion because they have more of a top crust.

Bran Muffins- Makes 12 standard muffins

1 cup flour
3/4 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cup bran cereal
1 cup milk
1 egg
1/4 cup vegetable oil

In a large measuring cup combine milk, egg and oil.  Add cereal and let sit  for about 5 minutes.  In a large mixing bowl combine dry ingredients and then mix in wet.  Pour into muffin pan.  Bake at 400 degrees for 18-20 minutes.
